Spaghetti Bolognaise: A question

Why does Spaghetti Bolognaise always taste better a few days later than it does the day I make it? That hardly seems fair.

No idea why, but it's true though isn't it? The same goes for any casserole I make - always better the next day!

It's true. Foods with herbs that are slow cooked need time for their flavours to permeate properly and for the harshness of some of the herbs to settle and blend properly with the rest of the ingredients.

Mmmmm. Spaghetti...

It does doesn't it? I love to make enough for several lunch and dinners!

I don't know, but my favourite part of bolognaise is the thought that I'll be having it reheated on toast the next day. Yuuuuuummmmmm.
